Tomato & Pepper Salad With Basil Balsamic Vinaigrette

  • 4.00 cup Lettuce - Red Leaf
  • 2.00 ea Tomatoes - Roma
  • 1.00 ea Peppers - Yellow
  • 0.50 oz Basil - Thai
  • 0.50 cup Olive Oil - Infused Roasted Garlic
  • 1.00 cup Vinegar - Crema Balsamica
  • 1.00 tsp Honey - Local
  • 0.50 cup Cheese - Asiago

Directions

  1. In a mixing bowl, mix together the balsamic vinegar and honey.
  2. When combined, slowly whisk in olive oil.
  3. Place cut tomatoes, peppers, and basil into the vinaigrette and season with salt and pepper and gently mix.
  4. Allow to marinade for at least 30 minutes.
  5. When ready to serve, drizzle some of the vinaigrette over the chopped greens and toss.
  6. Place salad in bowls and top with marinated vegetables.
  7. Garnish with salt, pepper, and asiago cheese.
