Herb Roasted Acorn Squash With Feta Cheese

  • 1 Acorn Squash
  • 3 tbl Sweetwater Growers Roasted Garlic Olive Oil
  • 1 tbl fresh thyme, stemmed and chopped
  • 1 tbl fresh rosemary, stemmed and chopped
  • ¼ cup fresh parsley, chopped
  • ½ cup Capra Gia Feta Cheese
  • salt and pepper to taste

  • 1.00 ea Squash - Acorn
  • 3.00 tbsp Olive Oil - Roasted Garlic & Rosemary
  • 1.00 tbsp Rosemary - Organic
  • 0.25 cup Parsley - Italian
  • 0.50 cup Feta - Persian Style

Directions

  1. Preheat oven to 375 degrees.
  2. Slice acorn squash in half lengthwise and scoop out seeds from the center.
  3. Coat the squash with olive oil on all sides.
  4. Season the flesh side with salt, pepper, thyme, and rosemary.
  5. Turn flesh side down onto a baking sheet lined with parchment paper and  roast for 30-45 minutes, or until squash is tender to the touch.
  6. Allow to rest for 5 minutes.
  7. Turn squash flesh side up and garnish with fresh parsley and feta cheese.
  8. Serve immediately.
