Frittata With Kale, Tomato, and Ham

  • 2.00 tbsp Basil - Thai
  • 0.50 cup Kale - Green
  • 0.50 cup Onions - Yellow
  • 1.00 ea Tomatoes - Round
  • 0.50 cup Ham - Uncured Cubed
  • 8.00 ea Eggs - Free Range
  • 0.25 cup Cream - 40% Heavy
  • 0.25 tbsp Cheddar - Flat Creek


  1. Preheat oven to 375 degrees. 
  2. Crack the eggs into a mixing bowl and whisk together with the cream until smooth. Season with salt and pepper if desired and mix through. Set the egg mixture aside.
  3. Meanwhile, pour the olive oil into a non stick skillet over medium heat.
  4. Add the onion and kale and saute for 5 minutes.
  5. Add the ham and tomato and saute for another 3 minutes.
  6. Add the egg mixture and gently stir just to combine the vegetables with the egg.
  7. Lower heat and let the eggs cook until the edges set, about 5-7 minutes.
  8. Remove from heat and place skillet in the oven.
  9. Bake the frittata until the eggs are fully set through the center and the top begins to brown, about 7-10 minutes.
  10. Cut into slices and serve immediately.
